Personal Sized Apple Tart (2008-02-22)

I use the 2-fork method: mashing and fluffing

Until it becomes sandy

Forms into a ball after cold water is added

The dough is divided into two discs and chill

Each ball is rolled out into a thin sheet

To about 2-3mm/1/8inch

I leave the top a smidgeon over the edge because the dough shrinks after cooking

An apple is finely sliced

And layered into the pie plate

It is then sprinkled with cinnamon and sugar

Very flaky

You can make the pie with pears like these ones. I replace the cinnamon with ground ginger and cut the amount of sugar on top since pears are so sweet already
