Beef Pho (2008-09-17)

Rice noodles for dinner two nights in a row, this time using the beef pho seasoning pack Lina sent us.

I did deviate from the direction a little by substituting beef stock with 1/4 tsp chicken stock powder, which I don't think makes a big difference in the taste.

However the deciding factors for the soup to work are 1) mandolined onion slices and 2) coriander.  Without these, the soup would lack the depth and soul which is essential in that authentic beef pho taste.  If you don't have onions and coriander or don't like them, go make something else for dinner, ha!

The big bowl of noodles is indeed yum!  Since we haven't had beef pho in eons, we devoured the whole thing.
