Pickled Vegetables (2005-01-30)
It took me a long time to get to like Japanese pickled vegetables. When I first came to this country, I rejected almost every food that was pickled or marinated. I particularly loathed marinated raw squid in the juice of its intestines (Yes, such food does exist). Although I love fresh vegetables I hate them pickled which makes them salty and sour.As time passed, I had many chances to try more kinds of unusual
pickled vegetables. The more I tried them, the more I accepted
their taste. Now I actually like a few classic varieties such as
pickled daikon (white radish), pickled cucumbers and pickled
eggplants. Perhaps my taste buds have become Japanized, but I
will never ever like marinated raw squid. Never ever.
