Winter Melon And Stuffed Fried Tofu Dish (2010-09-11)
Ingredients
Winter melon is deseeded and cut into chunks
Shrimp is minced
Ready for the next phase
Boiling water poured over fried tofu sheets to remove some grease
They are patted dry and cornstarch sprinkled on top
Shrimp paste is smeared over them
Put the tofu sheets like this to make a sandwich
And cut into cubes
Sear all sides
And I do mean all six sides
In the same pan, fry the ginger slices
Add the melon
Cover it with some water or stock, add seasoning, cover and cook on medium heat
When the melon is soft, not much liquid is left
Add the stuffed tofu and continue to cook for five minutes or so
This is the amount of sauce left at the end
I thickened it and poured it over the melon and tofu
I keep the sauce tight in this dish because the melon will give out quite a bit of juice after removing from the pan
