Homemade Chinese Pickled "Snow" Vegetable (2009-02-06)
The vegetable is salted throughout
I weigh it with a 4kg pot (8.8Ibs)
After 12 hours
This much liquid comes out
The vegetable is washed twice thoroughly
then it's squeezed dry and ready for cooking
I cooked the chopped snow vegetable with garlic, chili and marinated pork strips (soy, sugar, salt, pepper, sesame oil, cornstarch)
Fry the vegetable in a bit of oil and sugar for a few minutes, remove
then fry the rest of the ingredients. Return the vegie to the wok and season with more sugar, tiny bit of soy, wine and water
Makes a great topping for noodles
