A Childhood Dish (2007-11-18)
When I was living in Hong Kong, my mom used to cook a dish of stuffed peppers and tofu pockets. She'd also stuff very hot chili because my dad loves killer chili peppers. The stuffing's always made of minced fish, seasonings and chopped scallions which remains to be my favorite kind of stuffing mix today.I bought a large bag of Japanese sweet chili peppers called shishitou
the other day which were twice the size of the usual
ones. The first thing that popped into my mind was to stuff them
like my mom did. Of course I couldn't find the type of fish she
would use, but I found a pretty similar substitution by luck. I
also had
to add some scallop in the mixture because the fish didn't give me as
much meat as I thought it would.
The result was awesome. The stuffed peppers tasted every bit like my mom's and oh so delicious.
